FAIRFIELD, CT — Adam Goldberg is building an empire with just five bagels.
Three years ago, the Westport resident founded PopUp Bagels, which recently opened at 1814 Post Road in Fairfield, the growing chain’s eighth location.
“It’s wild, three years later, we have 100 employees,” Goldberg told Patch.

All on the popularity of its Everything, Sesame, Salt, Plain and Poppy Seed bagels, baked fresh in small batches that come out of the ovens about every 10 minutes.
Goldberg says it is that freshness, and the use of the best ingredients, that a growing number of customers have come to love. PopUp Bagels has won numerous “best of” awards for its bagels, such as at the 2021 Brooklyn Bagel Fest, Goldberg added.

Additionally, the shop just sells bagels — with delicious cream cheese and butter schmears. Scallion and Plain cream cheese are constant schmears, but PopUp Bagels also serves specialty schmears on a weekly basis, such as Caramel Cheddar Popcorn, Hot Honey Butter and Honey Chipotle.
And unlike a lot of bagel shops, PopUp Bagels does not sell sandwiches.
“All of our focus is on making a high-quality product, our bagels,” Goldberg said. “I’m a big fan of doing one thing, and doing it right.
“And, we try to make it fun for customers who come in.”
The stores also sell swag, such as hats, t-shirts and tote bags, which read, “Not famous, but known.” The walls of the Fairfield shop are also plastered with photos of customers enjoying their bagels.
In addition to Fairfield, PopUp Bagels also has locations in Westport, Redding, Greenwich and Newtown, and at its three Manhattan shops, Downtown, Upper West Side and Upper East Side, they routinely have lines for fresh bagels. Expansion is on the horizon, with new shops planned for Boston, Brooklyn, and Roslyn, Long Island, in addition to Florida.
